Boba Tea

This refreshing beverage features a creamy milk tea base infused with Canadian ginseng. Topped with chewy tapioca pearls, this drink is a delightful way to enjoy the benefits of ginseng in a modern and delicious way.

Makes: 2 servings

Ingredients:

Tea:
3 cups water
3 black tea bags
1 tbsp Canadian ginseng slices

Tapioca Balls:
¾ cup quick-cooking tapioca balls
½ cup reserved cooking water
⅓ cup brown sugar

To Serve:
Ice cubes
1½ cups 2% milk or non-dairy substitute

Directions:
  1. Cook tapioca balls according to package directions; reserving ½ cup of cooking water.
  2. In a kettle or saucepan boil 3 cups of water; remove from heat and add tea bags and ginseng; steep for 5 minutes. Remove tea bags and ginseng; set aside.
  3. Meanwhile, in a small saucepan over medium heat, add ½ cup reserved water and brown sugar. Bring to a boil for 2-4 minutes; add tapioca balls and lower heat to medium-low.
  4. Simmer for 5-10 minutes, stirring occasionally, until thickened. Remove from heat.
  5. Divide tapioca balls between two large glasses. Top with ice, ginseng tea, and milk. Enjoy.
