This breakfast is perfect to prep ahead of time and heat up in the morning for a quick but warm and comforting start to your day.
Prep Time: 10 minutes
Cook Time: 30 minutes
Makes: 4 Servings
Ingredients:
1 tbsp Sesame Oil
3 Garlic Cloves, minced
1 tbsp Canadian ginseng slices
½ Yellow Onion, diced
10 oz Tofu, cut into 1/2 inch cubes
1 Carrot, diced
4 cups Vegetable Broth, or more as needed
2 tbsp Soy Sauce (or tamari sauce, if soy-free)
2 cups Chopped Broccoli
12 units prepared Vegan Dumplings
Directions:
Heat the sesame oil in a soup pot (or Dutch oven) over medium-high heat. Add the garlic and Canadian ginseng and sauté for 30 seconds. Add the diced onions, and tofu cubes, and continue to sauté for 3-4 minutes, stirring occasionally.
Next, add the carrots, broth, and soy sauce. Stir to combine, cover the pot, and simmer over medium heat for 8-10 minutes. Then add the broccoli. Cover and simmer for another 5 minutes until the broccoli has softened.
In the meantime, cook the dumplings according to the package instructions.
Serve the soup in bowls and place the dumplings on top. Enjoy!
